Our story
About The Blistered Tortilla
The Blistered Tortilla is a one-trailer quesadilla kitchen run by Amy Jury, based in Buckeye, Arizona. We started in 2025 with a trailer, a griddle, and a simple idea: take the quesadilla seriously.
Since then we have vended at school fall festivals, trunk-or-treat nights, food-truck festivals, brewery taprooms, BMX races, private parties, and community events across the West Valley — most weeks we are out several nights in a row. There is no restaurant to find us at. The trailer goes where the people are.
Everything is pressed on the flat top the moment you order it, then cut and handed to you. Thirteen specialty combos, a build-your-own bar, dessert quesadillas, and fresh-squeezed lemonade. Nothing sits under a heat lamp waiting for you.
When the cause is local we give back. At the Venado Middle School Open House we put 15% of every sale into the school PTO — the kind of event that reminds us why we park where we park.

Questions people actually ask
Do you take orders online?
Not yet, and that is on purpose. We order and take payment at the trailer window, then cook it fresh while you wait. It is faster than an app for most people and it keeps the food hot.
Where will you be next?
Every public date we have posted is on our schedule page, and you can sign up below to get an email when new dates go up. We also do private parties and school events — those are booked directly and do not appear publicly.
Do you cater?
Yes. We cater office events, school functions, birthdays, festivals, and private parties across Phoenix and the West Valley. Send the date, headcount, and location on the catering form and we will reply with a quote, usually within one business day.
What can I put in a quesadilla?
Build-your-own starts at $8 with a cheese quesadilla. Add any filling for $3 — chicken, steak, bacon, pepperoni, mac and cheese, feta, parmesan, guacamole, onion, bell peppers, tomatoes, spinach, lettuce, garlic, alfredo, BBQ, or buffalo. Sour cream, ranch, and buffalo sauce are no extra charge.
Do you have vegetarian options?
Our Margherita (garlic, basil, tomato, parmesan) and our Veggie combo (spinach, onion, tomato, bell pepper, zucchini, balsamic reduction) contain no meat, and you can build your own with any of the veggie fillings. One thing to know: everything is cooked on the same flat top. If you have a serious allergy, please call us before you order and we will talk it through.
Can I pay ahead?
You can pay us with Cash App at the trailer — look for the link on this page or in our Instagram bio. Otherwise we take credit and debit cards and cash at the window.
Do you have dessert?
Yes — dessert quesadillas. The Apple Crunch, Churro, Campfire, Peach Passion, and Strawberry Cheesecake are all pressed on the same flat top as the savory ones for $12 each.
What payment do you take?
We take all major credit and debit cards at the trailer, and cash. We also do flavored lemonade, soda, and water.
